Easy Freeze-y!

Since being diagnosed with fibromyalgia in late 2013, cooking for my family (WHICH I LOVE DOING) has gotten harder and harder. So in the quest for making sure my family has GOOD, garbage free food to eat, without all the chemicals and crap I have had to find ways to cook from scratch and make it last! In that quest, I’ve come up with this recipe. On Sunday, I usually do most of my cooking. Like making bread from scratch, soaps, etc. Last week it was french toast for the week. Today, it’s waffles from scratch & bacon from my FAVORITE family farm! Henson Heritage Farm .They pride themselves on raising and making sustainable, ethical products. With their Facebook updates and livestream you can follow their farms adventures year round. All of their meat is USDA processed. They make monthly deliveries to Utah, Vegas, and SoCal. So if you’re in those areas, I SWEAR you won’t regret buying their meat! I do the bacon in the oven. I’ll blog on that another day. Stop distracting me from the waffles. …

So! Now you see the final product. Let’s get back to making! 

My recipe is from several recipes on Pinterest. But I just took them all, and made it my own.  And my boys loved it! Not only did I make breakfast for today, I doubled my batch of waffles, and froze the rest for the week! My husband gets up REALLY early in the morning, so he just pops them in the toaster to heat them up, slather on some butter, syrup and DONE! YUMMY, crap free food. Easy on me, easy on him. Win, WIN! 

Gathered ingredients. …but forgot the baking powder. 

And because I have a 4 year old. … “helping” the pictures are pretty scarce! If you’re using sprinkles, don’t over mix them! They will bleed color into the batter.

Here’s my waffle iron. My parents left it in our motor home YEARS ago and well. Let’s just say, they’ve not gotten it back. Shhhhh…..don’t tell them! 

A light spritz of pam, and POUR! BUT DEFINITELY NOT TOO MUCH. It’ll be burping and farting out the sides of it. …not that I know from personal experience. I saw it on YouTube. Ok. I lied. Well, both. It farted and burped out the sides and made a goopy  mess on the counter. But there’s also a hilarious video of it happening to someone else on YouTube. And it’s HILARIOUS!!

And viola!

Easy Freeze-y Waffles 

1 batch yields approx. 8 waffles, so I usually double this recipe and freeze! 

  • 2 cups All Purpose Flour 
  • 2 tbsp Sugar
  • 1 tbsp Baking Powder
  • 1/2 tsp salt
  • 1 3/4 cup Milk
  • 6 tbsp Olive Oil
  • 2 Large Eggs
  • 1 tbsp Vanilla Extract
  • *Optional 2 tbsp sprinkles 

Mix dry ingredients with a whisk! TThen add wet ingredients! Easy Peezy!

Pour in 1 cup increments into hot waffle iron! 

Not without collateral damage. …

Yes, that IS two-time America’s Next Top Model contestant and one-time winner Lisa D’Amato, and recently on Marriage Boot Camp, in one of my swimsuits. …cool right? She’s incredibly funny, and sweet. We also filmed a tv show together, MANY years ago called Rad Girls in Balboa Park that was on MavTv and FUSE tv for a short time. It was the female version of JackAss. No, that is not me in the diaper, barfing up hot sauce. I’m in the gym socks dropping off water. …Yuck. 

I’m a super DIY’er. I love making things from scratch! And those things are what led me here. To this blog. Oh, and I was also on the TV show Botched. It was a whirlwind of back to back surgeries, green screen interviews, camera crews, and being shown in EVERY MAGAZINE ON THE STANDS for MONTHS! 10 seconds of fame. ..from which I’ve been able to attend some cool events, and make some pretty cool, fellow Reality Tv’ers which will be highlighted in my upcoming blogs! From celebrity chefs, to survivalists! 

Recently we moved from the city, into the sticks. Shock for some. Heaven for us. I feel like a city charmed-Pioneer Woman over here. … 

This is the GORGEOUS view of my neighbors’ horse Luke from the top of our 1 acre property. Not too shabby, right?! What a LOOKER! 😍
